Vegan Holiday Stuffing

This is so very tasty! I can't wait to get my mouth around it tomorrow. I was going to stuff some gluten, but then I thought I would encourage the omnivores in my family to appreciate veggies a little more by making stuffed mushrooms instead of having them compare my mock meat to their real meat. It turned out awesome! I made this along with some chocolate mousse and some macadamia cream. Lush!

Ingredients:
One cup cooked chickpeas, mushed.
One cup of breadcrumbs.
One cup of chopped macadamias.
Half a cup of chopped mushrooms.
One teaspoon fresh marjoram.
One tablespoon fresh parsley.
Half an onion, chopped.
One minced clove of garlic.
4 tablespoons of vegan margarine. (should have mentioned this recipe is really fattening!).

Sauté the garlic and onion in a frypan on medium heat in one tablespoon of margarine until translucent. Add the breadcrumbs and the chickpeas. Cook on medium heat, stirring for about three minutes. Add the mushrooms, herbs and remainder of the butter and salt and pepper to taste. Stir until golden.
We're actually probably going to eat this tomorrow because I have to go to work soon. The stuffing filled the house with such intense smells. So delicious.
We did have breakfast together though. Mum made prawn cocktails, and made mine with LamYong vegan prawns. It was really tasty! Everyone was saying how good their prawns were and then laughing at me for nodding my head along with everyone else.
