Vegan Chocolate Mousse

Hello Delicious!
I've been searching for a luscious anti-tofu mousse and I have stumbled on this little beauty. Mmm Mmm! This certainly satisfied my chocolate craving.

5 minutes prep time.
Two hours setting time.
Serves 4.

This recipe is really easy too.

You will need:
  • One can of coconut milk.
  • 200 grams of dairy free chocolate.
  • Either half a teaspoon of almond essence, peppermint essence or orange essence.
  • and perhaps if you want to go with that choc-orange flavour, add  a tablespoon of grated orange rind.
In one bowl mix the coconut milk with the essence and/or the grated orange rind.
Separately, either in a double boiler or a microwave, melt the chocolate, making sure that you stir it regularly. Be careful not to overcook, because that is bad, bad, bad, baby.
Mix the chocolate into the coconut mixture and stir really well. Pour into 4 small bowls/ tea cups. Refrigerate for a minimum of two hours.
This dessert tastes exactly like chocolate mousse.
