Glorious Greens Gaspacho


Here is another simple and easy way to get your greens into your guts, other than the sweet, sweet smoothies that we so often focus on.

This is a basic idea. You can play with your own flavours to come up with a mix you love.

Time: 2 minutes
Serves: 1

Ingredients:

  • Half an onion (if you're scared of onion breath, miss this step).
  • A clove of garlic (ditto as with the onion).
  • Three tomatoes.
  • A handful of rocket. 
  • Half an avocado. 
  • A handful of basil.
  • A pinch of salt and pepper. 
  • As much water as you need. 
  • A sprinkle of smoked paprika. 
Method:

Put all of the ingredients except for the water and blend for a full minute. Add as much water as you need to make it the consistency you like. Top with a sprinkle of smoked paprika. 

Serve with crackers or just sip like soup. x

    1. Yeah, it is a pretty refreshing mix. Even though we are all complaining about winter here, I am actually sitting in my lounge room with a tshirt on and no heating, so our winters aren't all so bad. ;) x
