So I've run out of chickpea's to make hommous and I'm looking for a dip for this weeks lunches. I swear I can remember seeing a recipe for a walnut and pepita dip somewhere but I certainly can not find it.
So I made this one up. It's actually surprisingly tasty and only requires the use of a food processor.Ingredients:
- 2 cups of walnuts that have been soaked in water for about ten to fifteen minutes, drained.
- Juice of one lemon.
- Quarter of a teaspoon of grated Ginger .
- Quarter of a teaspoon of chopped garlic.
- Two tablespoons of olive oil.
- One tablespoon pickeled jalapenos.
- Two teaspoons of soy sauce.
- Two spring onions.
- Two tablespoons fresh parsley.
- Small pinch of salt and pepper.
- Half a cup of water.
Method:
Throw all these ingredients into a food processor and blend until it's a pate like consistency. Depending on your food processor, you may need more or less water. I blended mine for about 7 minutes at various speeds and I'm really surprised at how tasty it is.
