We have a big, beautiful fig tree in the backyard that is currently bursting with ripe fruit. Here's yesterdays lunch:
Ingredients:
6 ripe figs, cut in half.
Drizzle these with olive oil and roast in the oven at 180 degrees celsius or 340 degrees Fahrenheit, for 30 minutes turning once.
You will also need:
A handful of rocket or arugula.
One teaspoon of chia seeds.
A splash of balsamic vinegar.
A splash of olive oil.
Two tablespoons of chopped, mixed raw nuts.
Put the rocket in a bowl. Add the figs. Top with nuts. Add the seeds. Drizzle in the oil and vinegar.
Enjoy!
Ooh, you are so lucky having a fig tree in your backyard! Some friends bought me one a few years ago after we'd been on holiday to Tuscany and I fell in love with fresh figs. Unfortunately it didn't fare too well in our damp Manchester climate, it grew some leaves but no figs!
ReplyDeleteThat's such a shame! This fig tree is freaking huge. They're so yummy. We have a pretty great garden in this place. We also have a large walnut tree that has many walnuts on it, ready to go, and a big veggie patch with all kinds of things in it. I have a curry leaf tree, a dwarf lemon tree, a bay tree, a banana tree and today I bought a cumquat tree. I have these ones in pots. Watching all these things grow is just beautiful :)
