Vegan Super Healthy Rainbow Soup By Request... Or the "Let's all get better" soup.


Ok... Some of you asked for the recipe, so here it is...

I am a mega fan of soup, in case you hadn't noticed. At the end of the fortnight, I usually rummage through the fridge and throw everything that's starting to wilt in a big pot with some water, herbs, garlic, dried shittake mushrooms, soy sauce and pepper and come up with something pretty special.

In this case though, as I have not been very nice to my body lately (eating too much bread and working night shift) I decided it was time for a detox. In order to do this, generally make a soup and eat fruits and veggies for a week, cutting out all processed foods, sugars, salt, processed fats and caffeine. Trying to restore some balance.

This soup is super yummy, I must admit. I added every veggie I had in the fridge, plus more. As I was out of dried shittake mushrooms, I added nutritional yeast instead. This is a really easy soup to make. Just adapt it to what ever you have. Delicious!

Time: Ten minutes prep time and 30- 40 minutes simmering.
Feeds: I dunno... maybe 10?? Depends on how many veggies you have.

Ingredients:
  • One leek.
  • Four cups of diced pumpkin.
  • Two carrots, diced.
  • Ten string beans, diced.
  • One head of broccoli, diced.
  • One bunch of kale or black cabbage, sliced (you could just use normal cabbage).
  • Two cups of mushrooms, sliced.
  • One beetroot, diced.
  • Half a cup of dry, split, yellow peas.
  • Half a cup of broad beans.
  • Two purple or blue potatoes (you could just use normal potatoes).
  • One tablespoon of oregano.
  • One tablespoon of thyme.
  • Two bay leaves.
  • Two cloves of garlic, crushed.
  • Two tablespoons of nutritional yeast.
  • Quarter of a cup of soy sauce.
  • Enough hot water to cover the veggies in a pot by an inch.
Method:

Throw it all in a pot and bring to the boil. Simmer for 40 minutes or so, or until the peas are good to go. Add more water if it needs it.

I added some spring onions when it was ready to serve.

It's a very hearty soup. Deliciousness in a bowl. My body is thanking me right now. xx
