Here is a simple and easy way to make coconut milk if all you have in the cupboard is shredded coconut.
I wanted to make a Thai red curry tonight but was lacking in an essential ingredient: coconut milk.
Time: 5 Minutes.
Makes: 1 and a half cups.
- One cup of shredded coconut.
- One and a half cups of boiling water.
Method:
In a blender, put the coconut and pour the water over it. Let it sit for two minutes.
Blend the coconut on high for 30 seconds.
Pour the mixture through a strainer, into a bowl and press the coconut so that all the liquid comes out. Sit the coconut aside to use in something else (I made chocolate and coconut truffles).
There you have coconut milk, ready to use. If you leave it sit for a few hours, you even end up with a layer of oil/ cream on the top.
How easy!
Awesome post! I've been wanting to make fresh coconut milk. Something about pouring stuff out of a can doesn't really do it for me, especially when there's numbers on the ingredients list ;)
