Raw Tangelo and Cacao Cheesecake and cat stretches. x
Hey there.
I hope you are having a lovely morning.
I have today off and am planning to have a whole lot of "me" time. I've been a bit stressed lately and I can feel it in my bones. Literally. They have been making a whole lot of snap, crackle and pop sounds that make me feel like I'm about 50 years older than I am.
I've been trying to do nice things for myself this last week, really focusing on moving and eating well. Now, I'm not really one who enjoys working up a great deal of sweat, unless it's on a dance floor or in a crowd at a concert. I'm not really that into running and jumping up and down in some coordinated fashion. My job is a busy one, so I figure I do enough running around at work. My stress release and exercise at home is basic and simple...
I turn up the radio as loud as it goes and sing and interpretive dance all the way around the house. In my head, I'm some kind of rock star. To the neighbours, I'm a bit mental. It just feels so good.
There are just some points in my life where I need to dance.
At other times, I stretch like a cat, feeling all that tissue move around and release from it's tight grip on my poor bones. It's essential.
Stretching releases stress and anxiety and keeps me nimble and helps me keep my balance, both internally and externally.
The main thing that I focus on with exercise is that when I'm old, I want to be able to ambulate without assistance. I want to be able to walk without fearing that I'll fall.
I want to have balance in the true sense of the word and I know that if I want to be a healthy, bohemian 90 year old with tales and yarn to spin, I gotta start now.
So this is what today is about.
Last night however, I was having some major dessert cravings. I decided I was going to make a cheesecake. It took just a few minutes to make as I chucked everything in the blender and then it took about an hour to set in the fridge. It was easy.
I followed this recipe but instead of macadamias in the base, I used brazil nuts. Instead of strawberries I used a tangelo. Instead of the topping I sprinkled cacao nibs. This is really a recipe that you can swap and change with.
The result was delicious. I don't think I'll ever get sick of raw cheesecakes.
Obviously, they are a "sometimes food" but they are a pretty damn good way to get in a whole bunch of fruit and nuts. One tiny slice goes a long way.
