'El Chubarano' or crumbed eggplant.

Gordy made this all by himself! He's a bit clever.
Take one eggplant and slice thinly.
In a bowl, mix a tablespoon of rice flour or corn flour with half a cup of water making a nice, thin paste.
In another bowl, put in about half a cup of breadcrumbs and a few shakes of salt and pepper.
Put the slices in the flour mixture one at a time, covering them. Then put each one in the breadcrumbs and cover.
Then in a pan, add some oil and heat. Then, add some Moroccan spice mix to the oil. Turn the heat down and add the slices, cooking both sides until golden brown. Drain on some paper towel and it's ready to go!
Gordy's pretty happy with the results. It's delicious.
Oh, and Gordy can't believe no one has commented on this recipe. He thinks it's the bees knees so if you would be so kind as to leave a comment, be content in your heart that you have made the likes of a full grown man smile :)
