Super easy cous cous

This is quick and easy and always there when I feel like something lush. And I mean quick.... and lush.

Feeds: 1-2.
Time: Maybe ten minutes, if that.

Ingredients:
  • A cup of dry cous cous.
  • One teaspoon of olive oil.
  • Enough boiling water to cover said cous cous in a bowl.
  • One teaspoon minced or chopped garlic.
  • Four sliced mushrooms.
  • Half a sliced zucchini.
  • One sprig of a spring onion.
  • Half a cup of cherry tomatoes.
  • One piece of preserved lemon.
  • Drizzle of olive oil.
  • Salt and pepper to taste (remember to go easy on the salt).
Take about a cup of dry cous cous and either follow the packet instructions or put it in a bowl, add a few shakes of salt and pepper, a teaspoon of olive oil and cover with boiling water. Cover with a lid a leave for about 5- 10 minutes, or whilst you're getting the rest ready. Then fluff with a fork.
In a saucepan, add some chopped garlic, some sliced mushrooms and sliced zucchini. Fry in a small amount of olive oil until cooked.
Separately, chop some spring onions, about half a cup of cherry tomatoes and one preserved lemon (optional).
Add it all together, and mix in the juice from half a lemon, a drizzle of olive oil and some salt and pepper. Serve.
This can be pretty sexy with roasted eggplant and sweet potato and even mint. Get creative and add your favorite herbs and veggies.
