Vegan Scones!


The scone is such a traditionally English food. It conjours up images of jam and tea and reminds me of  sunny afternoons out with my grandparents when I was a child. They are delicious and always a hit with the family. After my recent trip to the UK, I was determined to make a fluffy, vegan version as they are usually so filled with butter and cream. I made the jam, too. Someone was a little energetic this morning....

Makes: 12.
Time: 10 Mins prep time, 20 Mins cooking time.

Ingredients:

  • 3 Cups of plain flour.
  • 1 Teaspoon of baking powder.
  • 3/4 cup of soda water.
  • 1 Tablespoon of rice syrup or sweetener of choice.
  • Half a cup of soy/rice/oat milk.
Method:

In a bowl, add the flour, baking powder, water, sweetener and milk.

Mix together until all the ingredients are combined and knead only slightly. Over kneading will make the scones a little tough, so try to avoid that.

Roll out the dough so that its about 2 cm/ just less than an inch high.

Cut into rounds or use what ever cutter you have. I had a heart shaped cutter, so now i have cute little heart shaped scones.

Heat your oven to 200C or 390F. Line a pan with baking paper and line the scones up on the tray.

Lightly sprinkle the scones with some plane flour and then add the tray to the oven for 20 minutes until brown.

Place on a wire rack to cool or eat warm. Serve with jam or rice syrup. Delicious! xx
