Chickpea cutlets from veganomicon

Yum! I made these for dinner last night. I always thought it would be a bit tricky but it was actually really easy. The ingredients here are a little different in terms of measurements to the recipe in Veganomicon but you get the idea.
One cup of chickpeas.
Two cloves of garlic, crushed.
Half a cup of vital wheat gluten.
Half a cup of bread crumbs.
1 T soy sauce.
1 T smoked paprika.
1 T thyme.
1 T olive oil.
Quarter of a cup of water.
Salt and pepper to taste.
In a bowl, smoosh up the chickpeas. I used a potato masher and it worked a treat.
Add the other ingredients and mix together. Kneed the mixture for about 3 minutes until the mixture becomes kinda 'meaty'.
Separate into 4 patties and roll/ flatten them into your desired shape.
Pop them in a pre-heated fry pan in some oil for about 7 minutes each side, or until brown and firm.

    1. Hi Abigail. I buy mine from the Giganis Warehouse on South Road, Hindmarsh. If you haven't been there, you should check it out. They have everything and they are super cheap. Other than that, maybe try Goodies and Grains in the Central Markets. That is my favourite store. :) x
